My Meatless Mondays - Marinated Tomato Salad
I made this for one glaring reason and glaring is the perfect word to describe why. Sitting on my counter were baskets of bright red tomatoes, in different sizes and shapes. If they could talk, I am sure, they would say, "Get us out of here. It is no fun being on the bottom. I want to breathe. I need a new home."
Yep, they did need a new home and that was in a pot, a salad, a dish, a pan, anywhere but on my counter. I give them away but they seem to multiply. Isn't life grand?
The second reason, I made this salad is that I had mushrooms also not happy with their home.
Marinated Tomato Salad
4 - 8 tomatoes, any size or shape, the tastier the better
1 cup mushrooms, thin sliced
1/2 onion, thin sliced
1/4 cup olive oil
1/4 cup balsamic vinegar
1 teaspoon dried basil
1 teaspoon minced garlic
salt to taste
freshly ground black pepper
Combine onion, mushrooms and tomatoes in a bowl.
In a separate container, combine the olive oil, balsamic, basic, garlic, salt and pepper. Shake it up well.
Pour over the salad in the bowl and leave it for a few hours, if possible. At least, it should marinate for one hour.
Eat and enjoy.
