Tuna Avocado Salad – No Mayo

Avocado seems to be adaptable to most dishes, including those, you may not have given thought to. Have you tried it in soup? What about mashed potatoes? Pasto and Avocado? I have done all these and many more. The one that got several thousand hits is the Avocado No Mayo Egg Salad. I have no idea why it took off like it did. I can only imagine that people liked not using mayonnaise.
The avocado makes the tuna creamy. I ate this on some lettuce and I can see it as a sandwich filling, equally as well, as a salad. Spread it on crackers, serve it as an appetizer or mix it with lots of vegetables.
Tuna Avocado Salad
Ingredients:
1 avocado, peeled and mashed
1 can tuna fish, drained
1/2 tomato, diced
1/2 teaspoon minced garlic
1 tablespoon lemon juice
seeds for crunch
black pepper and salt to taste
Method:
In a bowl, combine the tuna with the mashed avocado until you have a smooth mixture.
Add lemon juice,garlic, salt and pepper.
Add the tomato to the salad.
Sprinkle the seeds on top or mix them with the entire salad.
This is another easy dish to put together that delivers lots of flavor.
