Spinach, Mushrooms and Salmon
Since our wedding, I have come home from work, tired enough to go to sleep and I have been finding posting, grading papers and even cooking, overwhelming. Although, cooking is still therapeutic, if I don't fall asleep in one of the large pots.
I threw together some odds and ends from the refrigerator and ended up with light meal. This kind of a meal is easy to make and lends itself to interesting combinations, depending on what is in the refrigerator or cupboard. The last ingredient, I added, was the Persian raisin which is a golden raisin but a little bigger. I like them more than golden raisins. I think, they are a bit chewier.
I had some cooked salmon, we brought back from the wedding dinner and decided to build on it. I bad some Baby Bella mushrooms, spinach and the raising and throwing them together produced a super meal.
Spinach, Mushrooms and Salmon
Ingredients:
1 tablespoon olive oil
1 1/2 cups cooked salmon, chopped into 1 inch chunks
2 cups of baby spinach
7 mushrooms, sliced
1/2 cup raisins
Method:
Heat olive oil in large skillet. Add mushrooms and cook about 4 minutes. Add salmon pieces and cook for another 3 minutes.
Add the raisins and cook for another minute until they are heated.
Add spinach, mixing it all together. Cook for about 3 minutes until spinach starts to wilt. Serve hot.
If you would prefer to serve this as a cold salad, just add spinach to mixture uncooked and serve cold.
I think sesame seeds or pine nuts would make a great addition.
