I make cabbage and noodles which is scrumptious so it did not surprise me when I made this dish. I basically added onions and mushrooms to make the dish and it made for a wonderful side dish.
Cabbage and Mushrooms
Ingredients:
1 large yellow onion, sliced
1 tablespoon olive oil
fresh ground black pepper, to taste
1/2 cup reduced-sodium vegetable broth
3 cups thinly sliced cabbage
1 cup sliced mushrooms
Method:
Heat oil in a 12-inch skillet over medium heat.
Add onion and mushromms to the skillet. Season with black pepper and add 1/4 cup broth . Cook for 5 minutes.
Add cabbage and the remaining 1/4 cup broth and simmer until tender, about 10 minutes.
This is not a pretty dish but it is tasteful. To add color, cook orange or yellow pepper along with onion and mushrooms.
