My Meatless Mondays - Berry Filled Cupakes
In another post, I will explain what these cupcakes are for but I am under pressure, right now, and want to get this posted.
Berry Filled Cupcakes
Ingredients:
2 sticks ) butter, softened
1 1/2 cups sugar
1 tablespoon baking powder
1/2 teaspoon salt 4 large eggs
1 cup apple juice 2 teaspoons vanilla extract
2 2/3 cups all-purpose flour
mixed berry jelly
Method:
Heat oven to 350°F. Line 18 regular-size muffin cups with paper liners
Beat butter, sugar, baking powder and salt in a large bowl with mixer on high speed 1 minute or until well blended.
Add eggs and beat about 2 minutes, until fluffy.
Reduce mixer speed to low and beat in apple juice and vanilla and then flour just until blended. Spoon batter into lined muffin cups, filling each a little less than one-half full.
Place a teaspoon of jelly on batter in each insert and cover with remaining batter.
Bake 20 to 25 minutes until a wooden pick inserted in centers of cupcakes comes out clean.
Cool in pan on a wire rack 5 minutes before removing from pan to rack.
