Chicken in a Blink

Chicken in a Blink


I rarely cook meat and chicken so you don't get to see recipes for them. This dish certainly seemed woth sharing with you.   I love this chicken dish and hope you do too.


Chicken in a Blink (adapted from All Recipes. Com)

Ingredients :

2 teaspoons olive oil
4 skinless, boneless chicken breasts, cut into cubes
1/2 cups distilled white vinegar
1 cup sugar
1/2 cup soy sauce
1 tablespoon red pepper flakes
1 teaspoon minced garlic
1/2 teaspoon ground ginger
1 cup frozen green peas
1 cup broccoli
1 cup shredded brussels sprouts
3 scallions chopped
3 teaspoons cornstarch
2 tablespoons cold water 


Method:

Heat oil in a large heavy skillet over high heat. Add chicken pieces, and fry, stirring, until browned. 


Pour in the vinegar, soy sauce, and sugar; stirring until sugar is dissolved. 


Season with red pepper flakes, minced garlic, onion powder, and ginger. Reduce heat to low, cover, and simmer for 15 minutes. 


Add the broccoli, shredded brussels sprouts, peas, and scallions.


Stir together the cornstarch and water, and stir it into the sauce. 


Continue to simmer until it reaches the desired thickness.
 
Eat and enjoy!
