Cheesy Pasta with Spinach-Walnut Pesto - Power Foods


Our Power Food, this week is walnuts.  I use walnuts, often, when I bake.  My first thought was to make my husband a coffee cake but I do that, all the time.  I did some searching and found the following recipe.  I thought it would be interesting and a change of pace.  I don't think my hubby was thrilled, though, since he did not comment nor ask for more.  It had an unusual taste and I can see where you like it or you don't.  


Walnuts are a rich source of energy and contain health benefiting nutrients, minerals, antioxidants and vitamins that are necessary for good health.

Pasta with a Creamy Sauce of Walnuts & Spinach Adapted from Moosewood Restaurant Low-Fat Favorites.

Cheesy Pasta with Spinach-Walnut Pesto

Ingredients:

2 cups. fresh spinach
½ cup walnuts, chopped
2 cups low-fat cottage cheese
¼ cup Parmesan cheese, grated
1 teaspoon dried basil
¼ teaspoon freshly ground pepper
3/4 cup pasta (shells, elbows, or other)

Cook pasta according to package directions. Drain.


Microwave spinach in water to cover for 2 minutes.  Drain.

Combine everything (except the pasta!) in a food processor and pulse until smooth.


Add the spinach sauce to pasta and combine, .


Eat and enjoy.

  1. This looks so creamy and delicious - you'd never guess it was made with low-fat cottage cheese (that's one of my favorite tricks these days).

  2. I love walnuts with pasta. It takes a little getting used to, but then once you like it, you love it.

  4. I made a stir fry with walnuts (and chicken) last week and it was luscious; this looks like a great vegetarian meal!
