Salmon with Creamy Dill Sauce

Last night, we had a  delicious dinner, Salmon with Creamy Sauce, Tomato Pie and Potato Rosti.  I should have made a salad to perfect the meal.  Nothing was heavy including the potatoes which were baked strips.  This is my kind of meal, tons of taste, light, colorful and oh so delicious.

As is usual, the chopping that takes the most part.  Otherwise, nothing is difficult to make.  All are baked so timing helps you get a hot meal out, at the same time.  I was not successful and had to reheat the potatoes, which I made first.        

Salmon with Creamy Dill Sauce


2 salmon fillets 1 pinch kosher salt (coarse)
1 pinch black pepper (

1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons fresh dill (weed minced)

1/4 orange bell pepper
1 teaspoon lemon juice
black pepper


Preheat oven to 350 degrees F.
Line the bottom of an ungreased baking pan with parchment paper.

In a small bowl mix together mayonnaise, sour cream,  mustard, dill weed, lemon juice, and pepper. 
Spread this mix over fillets.  Top with chopped orange pepper.

Bake salmon, uncovered 15 minute.
Eat and enjoy.
