Honey Dijon Chicken



I had this recipe picked out to make for dinner until my husband decided that he wanted to barbecue the chicken.  Our excellent compromise was for him to barbecue and for me to make the sauce.  I got the honor of putting the chicken and sauce together.  


This is one of those really simple recipes - little effort and lots of good eating.


Honey Dijon Chicken

1 pound of chicken cutlets, barbecued on grill
2 tablespoons melted margarine
1/4 cup honey
1 tablespoon Dijon Mustard
1 teaspoon Indian Curry Powder
1/4 onion chopped

Method:

Preheat oven to 350 degrees F.

In a bowl, combine mustard, honey, margarine and curry powder.  I microwaved the margarine to melt it.

In a baking dish, place the cooked cutlets and chopped onions.  Cover with sauce.

Bake for 10 minutes, just to give the sauce time to blend and onions to cook.

Alternate - cook sauce and onions first and add to chicken and there is no need to bake.  

I recommend the second but I was going along as I made this dish and it was too late when I realized I should have come to the same results on another path.
