Hidden Green Mine


As some of you may know, I have been posting lunches that I make from scratch on Bizzy Bakes, usually Monday through Thursday, except when I am not home for the day. Since Bizzy is Busy with the Recipe Box and I want to leave that open for all those who want to link up, I am sharing today's lunch, here.

I got an email, this morning, with the recipe in it. It is a Martha Stewart recipe and there is a video of it being made by Sarah Carey, here. Of course, my dish is completely different. I have used the spinach and eggs but not the mushrooms. I added tomato and cheese. I still owe the credit for a delicious lunch to Sarah and Martha.

I am having trouble naming recipes. I really am not comfortable listing all the ingredients, which many of us seem to be doing, these days. On the other hand, I don't have a name for many of my recipes. Sarah or Martha called this Eggs with Mushrooms and Spinach. I could call mine, Eggs with Tomato, Spinach and Cheese but that is so wordy.





I thought of calling it the Hidden Gold Mine but the hidden food is green and red. At least, you know the logic behind the Hidden Green Mine.

Hidden Green Mine    

Ingredients:

1 tablespoon olive oil, 2 cups spinach, squeezed well
1 large tomato, sliced
2 eggs
1/2 cup shredded Cheddar (I may have had more but that is a judgement thing>)

Method:

Preheat oven to 400 degrees
Spray olive oil on a small baking dish. Mine was about 4 or 5 inches in length and 2 inches in width.
Place spinach in greased pan. Place a few tomato sliced on top of spinach. I could only fit 2 large tomato slices. On each slice, place a raw egg.
Season with salt and pepper.
Bake until egg whites are set,10 - 12 minutes.
Remove from oven and sprinkle cheddar cheese on the top of the casserole.

Put under the broiler for a minute or two until the cheese has melted.
