Thai Mango Chicken

Throughout the day, I changed which chicken recipe, I was going to make.  I jumped around from nutty chicken to Italian chicken to Mexican chicken to roasted chicken ....... you get the idea ...... and I ended with the idea of a Thai chicken with mango, in some way, also in the pan.


I googled the information and all the recipes had the chicken with the mango salsa added, at serving time, but I wanted the chicken to cook in the mango salsa.  Finally, I found what I wanted on about.com -- Thai cooking.  Of course, I made some changes but the recipe got me where I wanted to be.

Thai Mango Chicken   (SERVES 4)
Ingredients:

2-3 chicken breasts, cut into 2 inch-long pieces (chicken thigh works too)
1/4 cup olive oil for pan-frying
1 cup of rice flour 

Mango Salsa
2 fresh ripe mangoes,
1/2 teaspoon dried crushed chili
1 tablespoon rice vinegar 
3 tablespoons soy sauce
juice of 1/2 lime
1 tablespoon brown sugar
1/2 teaspoon ginger
1/4 teaspoon turmeric

Method:

Place all 'Mango Sauce' ingredients in a food processor or blender. Process well, until more or less smooth.  ( I used my mini food processor and it fit in.)
 Set aside.
 
Put the flour in a plastic bag.  Add the a few chicken cutlet pieces at a time.  Shake it well until the chicken is coated with the flour.

Heat a wok or frying pan over medium-high heat. Add the oil, then begin frying the chicken pieces. Fry 3-5 minutes per side, or until light golden brown and cooked through. Remove chicken from pan and set on paper towel, or a clean surface.  (I used two pans to speed up the process - you don't want to overcrowd the pan.)
Pat the top of the chicken to get any oil absorbed in the paper towel.  Put the chicken into a casserole.
Cover the chicken pieces with the mango salsa and gently mix so that the salsa coats all the pieces.

We weren't eating right away.  I am going to heat the casserole in the oven at 350 degrees F for 15 minutes.  Then we plan to enjoy every bite.

  2. Mmm....I've had orange chicken and I've had lemon chicken, but I don't believe I've ever had mango chicken! Thanks for sharing and linking up :)
