Orange Mango Soup - Cold


Salmon was in my mind for dinner when hubby called, commenting on the heat, asking for a cold soup.  Where did that come from?  He has never wanted cold soup before.  Trust me, I was going to take advantage of this request and make a nice cold soup.

I didn't want savory.  Cold means sweet and I had two mangoes more than ready to use.  I checked out a few recipes to get some ideas and it seems that orange is a good match.  I did something wrong though.  The orange dominated and it did not have the mango flavor, I so wanted.  It may have been the zest which is so fragrant as you grate it.

Next time, I would throw in two additional mangoes.

Cold Orange Mango Soup

Ingredients:


2 mangoes, peeled
peel of one orange
juice of two oranges
 2 cups vanilla yogurt
1 tablespoon honey
additional 1 cup orange juice (I had to use store-bought)
1 teaspoon lime juice

Method:

In a blender, puree the mangoes and orange zest until smooth.
Add yogurt, honey, orange juice and lime juice.  Run through blender for 30 seconds.
 Serve with mint floating on top or if you don't have any, do as I do, use scallions or chives.
