My Meatless Mondays - Chili Fried Rice


Have you ever had a taste on your tongue and you can't figure out what it is but you want to duplicate it?  First, this is an imaginary taste.  It was so strong, I could sense it, though.  I am not sure how to explain this but it happened.


I had asked my husband to make brown rice, lots of brown rice, to serve at the barbecue.  I know, fried rice is not traditional but for some reason, I voted for it in place of potatoes.  I made it early and will heat it when folks get here.


While, I was cooking onions, peppers and carrots, I kept thinking about this taste, I wanted to duplicate.  I checked out Bittman's, Food Matters and although, he has a spicy fried rice, it was wrong.  "Go with gut", went into play and I fooled around with tamari, teriyaki, sesame oil, and Thai sweet chili sauce.  That was it.  The chili sauce replicated the flavor, I was looking for, and it was almost delicious.  Delicious would have been more spice but knowing hubby does not like it, I kept it at "almost delicious."


Chili Fried Rice

Ingredients:

4 cups cooked brown rice
1 - 2 tablespoons olive oil
2 carrots, sliced thin
1 large onion, chopped
2 red peppers, chopped
4 tablespoons Thai sweet chili sauce
1 teaspoon 5 Spice Powder
2 tablespoons Tamari sauce
2 tablespoons Teriyaki sauce
2 eggs, beaten well

Method:

In oil, in large skillet, cook onions, red pepper and carrots for 10 minutes.

Mix together Thai Chili Sauce, Teriyaki Sauce and Tamari Sauce.   Add 5 Spice Powder to sauces.  Mix well.

Add half of sauce mixture to veggies and heat to blend together.  Remove vegetables from pan.

Spray same pan with cooking oil and drop beaten eggs in little bits (1/4 inch) in hot pan.  Leave until egg cooks and add to veggies.

Spray skillet, once again, and pour rice into skillet.  Add veggies and eggs and mix together.

Taste.  Add more chili sauce or Teriyaki sauce if you want a stronger flavor.

Options:  Add scallions, celery, peas, snow peas, broccoli .
Add a hot chili sauce if you like food that bites.
