My recipe for My Meatless Mondays is this yummy butternut squash. I used the recipe for the squash and sweet potato kugel here and simply mixed some almonds and dried blueberries, cherries and apricots into the squash. I topped it with nuts and dried fruit and a mixture of brown sugar and cinnamon and voila, I had a new dish. I used about 1/2 cup of slivered almonds and another half cup of dried fruit. I also used 1 teaspoon cinnamon and 1/2 cup brown sugar. Spray the topping with oil. I baked it for 35 minutes. Delicious!
