Love the idea of meatless Mondays especially since I'm always on the lookout for vegetarian recipes. Would love to have the recipe for that quinoa dish you posted on top. It looks excellent.

It came from a Pillsbury pot pies & casseroles magazine that I picked up in the grocery checkout the other day.
