PB and Chocolate Brownies for the Boys
Ingredients
1/2 cup margarine in chunks
6 ounces semi-sweet chocolate, coarsely chopped
1 2/3 cups AP flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups sugar
3 eggs
1 teaspoon vanilla extract (pure)
3/4 cup chopped walnuts (I whizzed the nuts in the mini food processor until they reached the size, I wanted.)
Method:
In a large saucepan, melt margarine and bittersweet chocolate over low heat, stirring constantly.
Remove from heat and cool.
Line a 13x9x2 inch baking pan with foil, extending foil over edges of pan.
Spray foil and set pan aside.
In a small bowl, combine flour, baking soda and salt and set aside.
Stir sugar into cooled chocolate mixture in saucepan.
Add the eggs, 1 at a time, beating after each addition, just until combined.
Stir in vanilla extract.
Stir in nuts.
Spread batter in baking pan.
Bake in a 350 degree F oven for 25 to 30 minutes or until top appears set and pulls away from the sides.
Cool in pan on a wire rack.
Top with peanut butter icing.
Peanut Butter Icing:
In a small bowl, place 1 cup peanut butter. Put in microwave for 15 seconds or until it starts to soften slightly.
Add 1/2 cup confectioners' sugar and mix well with spoon.
Add 1 tablespoon softened margarine and 1/2 teaspoon vanilla to peanut butter mixture.
Mix with spoon until it is creamy.
Smooth out on top of brownies. Decorate with chocolate syrup drizzled on top. Refrigerate until one hour before ready to use.
Cut into squares and serve.
Enjoy.
