Meatless Mondays - Unlimited Choices

I am finding, there are more and more meatless meals that are more appealing to us, than those with meat. We have re-discovered vegetables, soups and salads. I love the combination of textures and tastes. How about you?

  3. We are starting to enjoy more meatless meals now and this looks like a great one! With summer approaching, it will be even better with all the available fresh vegetables. Love the colors of your dish also!

  6. My husband and I were both brought up with meat and potatoes for dinner. Recently I have been trying to add vegetarian dinners into the dinner line up at least once a week.
