I had to try something new for this celebration so I made Pasta Pancakes. What goes into a pasta pancake? I decided savory was the way to go. Chop the onions, the green peppers and yes red peppers, too. Now, what do I do?
8 ounces gluten free pasta (I used spirals)
1/2 cup chopped onions, chopped green pepper and chopped red pepper.
4 beaten eggs
1/4 teaspoon garlic powder
dash black pepper
1/2 teaspoon Italian seasoning.
Place chopped vegetables in a medium sized bowl.
Pour eggs over vegetables.
Spray a large frying pan and pour in egg.
It is ready to be turned over when it is browned.
You cut the pancake into four triangles. Turn each separately/
Cook for a few minutes more until the second side has also browned.
Serve and enjoy. It is good with a hearty salad.
Hubby and I both enjoyed this. I added salt to mine and he was hungry afterwards.
