Pasta Pancakes Go to a Birthday Party

I wanted to make pasta for Ruth and Presto Pasta Night.  This will be her third anniversary..  Let's celebrate with Ruth and all her loyal bloggers who continue to share pasta recipes.



I had to try something new for this celebration so I made Pasta Pancakes.  What goes into a pasta pancake?  I decided savory was the way to go.  Chop the onions, the green peppers and yes red peppers, too.  Now, what do I do?



Ingredients:

8 ounces gluten free pasta (I used spirals)
1/2 cup chopped onions, chopped green pepper and chopped red pepper.
4 beaten eggs
1/4 teaspoon garlic powder
dash black pepper
1/2 teaspoon Italian seasoning.

Place chopped vegetables in a medium sized bowl.
Pour eggs over vegetables.
Add seasoning.
Combine thoroughly.
Spray a large frying pan and pour in egg.
Let cook, on medium heat, watching it, up to ten minutes.
It is ready to be turned over when it is browned.
You cut the pancake into four triangles.  Turn each separately/
Cook for a few minutes more until the second side has also browned.

Serve and enjoy.  It is good with a hearty salad.

Hubby and I both enjoyed this.  I added salt to mine and he was hungry afterwards.

  4. I'd never heard of a pasta pancake. It sounds sort of like an omlette with pasta in it... looks yummy :)
