Roasted Cranberry Sweet Potatoes

I made those scrumptious intense chocolate cookies from a recipe I found on "Gonna Want Seconds" and now I have a sweet potato recipe from the same blog.  This was a great success. 

 Roasted Cranberry Sweet Potatoes

2 pounds sweet potatoes- peeled and cubed

1/4 cup margarine, melted

1/4 cup maple syrup

1/4 cup brown sugar-packed

1/4 cup dried cranberries

1/2 cup pecans- coarsely chopped

1/4 teaspoon cinnamon

salt and pepper to taste

Method:

1. Preheat oven to 425 degrees.

2. In a large bowl, combine all ingredients.

3. Pour ingredients out onto a large rimmed baking sheet so that they fit in a single layer.

4. Roast sweet potatoes to desired softness, about 15-25 minutes, depending on preference.

  1. We dont find cranberries aroun here but i wanna run first ting in the morn to look for some locally grown sweet potatos with ur lovely recipe...

  2. I absolutely love sweet potatoes and these look wonderful. Often I will just pop one in the microwave for a few minutes. And then add butter and brown sugar as a topping.... yum.
