Old Time Potatoes and Cheese

I was looking for some old and easy recipes using potatoes since I boiled too many potatoes for my potato muffins which you will get to see, later, I hope.  I have to make them first but the potatoes are sitting there giving me an evil grin.

Baked Chunky Potatoes with Cheese (casserole)



Ingredients:

4 medium size potatoes, cut into chunks

1 medium green pepper, cut into small pieces

2 small onions chopped - not diced

4 eggs

salt and pepper to taste
1/2 - 1 cup cheddar cheese

Method:

Preheat oven to 400 degrees.
Chop onions and green bell peppers into small pieces.

Spray a large skillet with Cooking Olive Oil.

Cook the onions and peppers until they begin to brown.
Cut potatoes into small chunks.

Spray casserole with cooking oil.

Put potatoes into casserole and bake for 35 minutes at 400 degrees.  They should be cooked at this point.

Add onions and green peppers.

Pour beaten eggs over top, mixing with potatoes and other vegetables, gently.
Mix in 1/2 cup cheddar cheese.

Sprinkle 1/4 cup more cheddar cheese

Lower oven to 350 degrees.

Bake for 30 additional minutes.  The flavors should blend in and the eggs will be cooked.

I know that you can mix everything in the beginning.  For some reason, at the time, I made this, I did not. Since, I don't remember why, feel free to mix it all together and bake at 400 degrees about 40 minutes or until potatoes are done.  You may have to cover if the cheese starts to burn.
